hing is ASAFOETIDA. It has a really pungent smell an very often used in indian cooking. do search it on google. I think you can find it in most Asian/Indian/Pakistani grocery stores! good luck finding!

I didn’t know either, but according to Wiki it’s a Giant fennel; cooked it should taste something like garlic or sauteed onion. So maybe use that instead? Good luck.

If you don’t have access to fresh ginger use dry but cut down the quantity to half.

You dont need to use corn starch. I use corn starch to give thickness to gravy. Corn starch has no flavors.
