Wine is not necessary – just adds a bit of flavor! If you want to add some other flavor I’d try it with a bit of vegetable stock. Hope you enjoy it, we certainly did!!

yeah, absolutely – you don’t need wine at all, or you could use a bit of vegetable stock. It adds a bit of flavor, but is totally not necessary! I don’t usually have wine sitting around the house, so I often do risottos without and it’s just fine. Hope you enjoy!

Any alternative to the wine? I’m a recovering alcoholic and don’t really like to cook with alcohol.
